These apricot bars are the most easy snack to make – great if you have a sweet tooth or want something for the kids.
- 1 Cup Sulphur Free Dried Apricots (increased potassium when dried!)
- ½ Cup Dates, Pitted
- ½ Cup Almonds
- ½ Cup Coconut
Add to a food processor, process well. Add the mixture to a small rectangular baking tin that has been lined with baking/parchment paper. Chill in the freezer for at least 30-45 minutes before cutting into bars.
Store in the fridge.
